Mama Brittany at Chatbooks is a frequent customer at her neighborhood Trader Joe’s. It started with Cookie Butter, and now TJ’s has become her main weekly grocery stop. In this blog, we take a peek at her 5 favorite go-to meals from Trader Joe’s. And the best part: they can all be made in minutes!
Brittany knows that visiting Trader Joe’s can be a little overwhelming, and how easy it is to end up with a cart full of nothing but snacks! “While Joe Joe Cookies might be the easiest (and most delicious) go-to,” said Brittany, “Trader Joe’s has many quick and easy meals for your family that can be whipped up in just a few minutes. I have two kids and a puppy, so my time is precious! I like to keep certain ingredients on hand for those nights I don’t want to spend more than twenty minutes in the kitchen.”
Here are a few of Brittany’s favorite, easy recipes.
Coconut Curry is the perfect Thai throw-together meal. Delicious, easy, and everyone will think you spent hours making it—it’s that good!
(Makes 4-5 servings)
1 Can Trader Joe’s Coconut Cream (or can of coconut milk with 1 cup whipped cream)
1 Jar Trader Joe’s Red Curry Sauce
Trader Joe’s Jasmine Rice (or frozen/fresh TJ’s Cauliflower Rice) or regular rice
2lbs Protein of your choice: chicken, steak, pork, shrimp, or tofu
5 cups of Veggies of your choice: zucchini, shredded carrots, diced potatoes, broccoli, cauliflower, mushrooms
1 TBSP of Trader Joe’s Coconut Oil
Salt & Pepper
Tandoori Frozen Naan (optional)
Cube your protein.
Cook cubed protein in a large pan with your coconut oil for 5-7 minutes or until almost done.
Cook your rice as instructed on the package.
Add the veggies of your choice with a 1/4 cup of water and cover with lid for 4-5 minutes.
When veggies are just about tender, add the coconut cream and red curry sauce.
Let simmer with a lid for 5-10 minutes.
Serve over rice with naan and add salt and pepper to taste.
Curry up and eat it before it gets cold!
Move over Mexican Restaurant! Trader Joe’s Pork Enchiladas will be the new favorite Mexican dish in your home from now on! Simply combine a few ingredients and then invite your friends over to enjoy a most delicious Mexican meal!
(Makes 5-6 servings)
1 Package Trader Joe’s Carnitas Pork (can be substituted for beef, chicken, or tofu)
1 Jar Trader Joe’s Enchilada sauce
1 Package Trader Joe’s Mozzarella cheese
1 Can Trader Joe’s Green chiles
1 Package Trader Joe’s Tortillas
Can of beans (optional)
Shredded Lettuce (optional)
Trader Joe’s Mexican Style Roasted Corn (optional)
Slice the pork and then cube into smaller pieces.
In a mixing bowl, add the chopped pork, green chilies, and half of the Trader Joe’s enchilada sauce. Mix well with a spoon.
Grease a baking dish.
Lay tortillas out in the baking dish and evenly spoon the mixture into each tortilla.
Sprinkle cheese inside each tortilla.
Wrap each tortilla mixture and turn the tortillas with the overlap on the bottom of the pan.
Pour the remaining enchilada sauce on top of the tortillas.
Put the remaining mozzarella cheese on top of the tortillas, covering them in sauce and cheese.
Bake uncovered in the middle of the oven for 15-20 minutes until the cheese is melted and bubbly.
Cook Mexican Style Roasted Corn as directed on package and serve on the side
Heat up beans and serve with lettuce on the side.
Aye carumba, these are delicious!

(Makes 3-4 servings)
1 Jar Trader Joe’s Stir Fry Sauce
1 Container Trader Joe’s Pre-Cut Stir Fry Mix
1 Package Trader Joe’s New York Strip Steak (substitute with chicken, shrimp, or tofu)
Trader Joe’s Cauliflower Rice or Trader Joe’s Organic Easy Jasmine Rice
Trader Joe’s Coconut Oil
Cube the chicken.
Cook chicken in a frying pan for 5-7 minutes or until no longer pink in the center.
Add 1 TBSP of coconut oil.
Set chicken aside on a plate.
In the same pan, pour in Trader Joe’s Pre-Cut Stir Fry Mix (or stir fry veggies you have on hand).
Add a little more coconut oil or a spoonful of water for more moisture.
Cook veggies for 5-7 minutes or until tender.
Combine chicken, veggies, and Trader Joe’s Stir Fry sauce in the pan and cook for an additional 2-3 minutes until sauce is hot. Pour over rice.
Stir things up with this yummy stir fry!
Gnocchi! Pesto! Together! Yes, please! Two of our favorites are combined in this dish for a lip-smacking dinner in minutes.
(Makes 3-4 servings)
1/2 Jar Trader Joe’s Pesto Sauce
1 Package Trader Joe’s Frozen Cheesy Gnocchi
2 chicken breasts or 30 shrimp
Cube chicken and cook in a frying pan on medium heat with 1 TBSP Trader Joe’s Coconut Oil for 5-7 minutes or until no longer pink in center.
Add in frozen (or fresh) broccoli. If your broccoli is fresh, add in 3 TBSP of water as well and put the lid on while stirring every 1 minute.
Add Trader Joe’s Cheesy Gnocchi and stir continuously. Add in a spoonful of water if more moisture is needed.
Once the cheese has mostly melted, add in 3 TBSP of Trader Joe’s Pesto sauce, stirring continuously for 2-3 minutes until mixed evenly throughout.
Gnocchiddin’, this one’s super good!

Trader Joe’s Premade Uncooked Pizza Dough
Trader Joe’s Pepperoni
Trader Joe’s Shredded Mozzarella Cheese
Trader Joe’s Mozzarella Cheese Log (optional)
Trader Joe’s Pizza Sauce
Sprinkle flour on your pizza pan or cookie sheet.
Roll out pizza dough on your pizza pan or cookie sheet, adding flour on top of the dough.
Add pizza sauce evenly on top of your pizza dough.
Sprinkle cheese on top of the pizza sauce.
Add pepperoni and any other desired toppings.
Thinly slice the mozzarella log and put 4-5 pieces on top for an extra cheesy pizza.
Bake at 450 degrees for 10-15 minutes or until bubbly on top.
